It was a Sunday late afternoon. Dad would be going away as a volunteer for his mission trip to Chiang Mai, Northern Thailand to teach English. I thought I should prepare a really nice, tasty and healthy meal and have dinner with my parents.
So, off I went for grocery shopping at a supermarket after class. I was so glad that the supermarket operated later than usual on Saturday nights!
Fresh fruits were being replenished when I reached there about 10pm!
I did not have a fixed list of items to buy instead I would see what was available and fresh! Yes! Fresh was the word!
Australian sweet mangoes looked awesome! The avocados looked good and were going for $3.95 for 3, and the grapefruits were big and red! A packet of oak leaf lettuce and romaine lettuce were going for $1.85 per packet. Ok! That's a deal!
Those red cherry tomatoes looked yummy too and all these made my shopping basket full in minutes!

5-Colours, 5-Tastes Homemade Guacamole Salad Sauce and Angel Hair Spaghetti with Mini Portabello Mushrooms

Serves 3
INGREDIENTS FOR SALAD
1 whole Grapefruit
1 whole Australian Mango
1 whole Avocado
1 whole Oak Leaf Lettuce
1 whole Romaine Lettuce
3/4 cup Cherry Tomatoes
1/4 cup Beet Root
A Handful of Pumpkin Seeds
Black and White Sesame Seeds
INGREDIENTS FOR SPAGHETTI
2 portions Angel Hair Spaghetti
6 whole Mini Portabello Mushrooms
1 tablespoon Grated Ginger
1 tablespoon chopped garlic (optional)
1 tablespoon chopped onions (optional)
1/2 teaspoon of fresh or dry red chilli (optional or according to taste preference)
A dash of black pepper
INGREDIENTS FOR
HOMEMADE 5-TASTES GUACAMOLE SAUCE:
1 tablespoon miso
1 tablespoon honey
1/2 teaspoon Bradd Liquid Aminos or soy sauce
3 limes and grind
1 whole avocado
1 tablespoon of Tahini paste or Sesame paste
1 tablespoon of sesame oil
4 tablespoons of filtered/ alkaline water
METHOD FOR SALAD: Wash and soak all vegetables and fruits for about 20 minutes (ideally with homemade fruits enzyme cleaner). Cut mango and grapefruit into cubes.
Cut the cherry tomatoes into halves and de-seed all of them.
Slice half an avocado into thin slices. Grate finely or slice thinly the beet root.
Arrange all the vegetables on your favourite plate.
METHOD FOR SPAGHETTI:
Boil Angel Hair Spaghetti as per instructions that are printed on the packaging. Drain and set aside.
METHOD FOR COOKING MUSHROOMS:
Use a slightly damp cloth to wipe the surfaces of the mini Portobello mushrooms and slice into small pieces (about width of fingers.)
Heat up a pot of water.
Boil the sliced mini Portobello mushrooms in the pot at high heat.
Turn the mushrooms with ladder occasionally.
Remove cooked mushrooms from hot water.
Press the mushrooms with ladder to squeeze out excess water.
Keep the hot water in the pot and set aside. You can use it as a ‘wash down’ into your pan after cooking the mushrooms.
Heat up wok or pan with oil and stir-fry the grated ginger, garlic, onion and chilli.
Stir-fry for a short while till slightly brown and fragrance.
Add the mushrooms and stir-fry. Season with black pepper. Set aside.
METHOD FOR HOMEMADE 5-TASTES GUACAMOLE SAUCE:
Slice open the avocado and use a spoon to scoop up all the avocado. Remove the seed and press with the spoon until it becomes a paste. Mix the avocado paste and all the ingredients together for the HOMEMADE 5-TASTES GUACAMOLE SAUCE.
You may add another tablespoon of alkaline/ filtered water if you prefer your sauce to be more diluted.
Final touches.....
Arrange the angel hair spaghetti and mini Portobello mushrooms in your favourite bowl.
Garnish with raw pumpkin seeds and roasted black and white sesame seeds.
Drizzle the HOMEMADE 5-TASTES GUACAMOLE SAUCE over the vegetables and buckwheat noodles, or serve it in your favourite sauce bowl. Serve immediately.
* For vegans or strict vegetarians, please use vegetarian miso and replace honey with maple syrup.
